Purple Thai Eggplant

Purple Thai Eggplant (Solanum melongena L.), family Solanaceae. This is a small eggplant with round to slightly flattened fruits and a natural purple skin. The fruits are commonly harvested while young, when the seeds are still soft and not fully developed. The fruit has a green calyx, a relatively smooth surface, and white to pale greenish-white flesh, making it suitable for food preparation, particularly pickling and fermented preparations.

Characteristic Features

Purple eggplant fruits are small, round to slightly flattened, relatively balanced in shape, and reasonably uniform in size within the same lot. Young fruits have a naturally firm and plump appearance and should not be excessively shriveled or soft.

The skin ranges from light purple to deep purple, with a relatively smooth surface and natural gloss. The calyx is green and fresh, and may have fine hairs characteristic of eggplant. The inner flesh is white to ivory or slightly pale green, moist, with small and soft seeds when the fruit is young.

Acceptable raw material should be fresh, firm, clean, and free from significant bruising, decay, mold, visible pest damage, or abnormal odor. Young fruits with soft, undeveloped seeds and non-fibrous flesh are preferred. Minor natural variations in shape or color are acceptable when they do not affect raw-material quality.

Flavor & Texture

Fresh purple eggplant has a mild vegetal aroma with a slightly astringent, mildly bitter, characteristic eggplant taste when eaten raw. Young fruits have firm, moist flesh with a slight crispness. After pickling or fermentation, the fruits retain their characteristic crisp texture and develop a sour, salty, and more pronounced flavor depending on the preparation method.

Uses and Applications

Purple eggplant is commonly used for pickling, brining, fermentation, and side-dish preparations. The fruits can be trimmed at the stem, washed thoroughly, and kept whole or cut according to the intended preparation before further processing.

Nutritionally, eggplant provides water, dietary fiber, carbohydrates, some vitamins and minerals, and naturally occurring plant compounds.
