
Green Plantain / Green Cooking Banana (Musa spp.), family Musaceae. This is an unripe banana harvested while still green, commonly characterized by short to medium-sized fruits with a slightly curved shape, green skin, and firm flesh. Green bananas are widely cultivated in tropical regions, including Vietnam. The fruit is commonly used while unripe as an accompaniment, fresh vegetable side ingredient, pickled ingredient, or cooking ingredient.
Characteristic Features
Green plantains have elongated cylindrical fruits with a slightly curved shape and gently tapered ends. The fruits should be relatively uniform in size within the same lot. When harvested green, the fruits are fully developed, firm to the touch, and free from excessive softness or skin shriveling.
The skin ranges from light green to dark green and is relatively thick and firmly attached to the flesh. The inner flesh is ivory to creamy white, firm, and relatively low in moisture, with small or poorly developed seeds depending on the variety. When cut or peeled, the flesh may release natural latex characteristic of unripe bananas.
Acceptable raw material should be fresh, green, and firm, without significant bruising, deep cracking, decay, mold, or visible pest damage. The skin should be free from severe dark discoloration or major physical damage and should have no abnormal odor. Minor surface scratches are acceptable when they do not affect the inner flesh.
Flavor & Texture
Green plantains have a mild vegetal aroma, a pronounced astringent taste with slight bitterness, and low sweetness because the fruit is unripe. The flesh is firm and less juicy than ripe bananas, with a slight crispness when eaten raw. After preparation or cooking, the flesh remains relatively firm while retaining its characteristic astringent flavor.
Uses and Applications
Green plantains are commonly served as an accompaniment to fresh rolls, boiled dishes, grilled foods, and meat or fish preparations. They can also be pickled, brined, or used in other cooked preparations. During preparation, the fruit can be peeled or sliced as required and soaked in water to help reduce browning and lessen the astringent taste before use.
Nutritionally, green bananas provide carbohydrates, dietary fiber, potassium, vitamin C, vitamin B6, and resistant starch.
