
Red Strawberry is scientifically classified as Fragaria × ananassa and belongs to the Rosaceae family. It is a berry fruit widely cultivated in temperate climates and highland areas, including Da Lat and other regions of Vietnam with suitable growing conditions. The fruit has characteristic red coloration, with shapes ranging from conical to heart-shaped or rounded, soft juicy flesh and a distinctive sweet-and-sour flavor.
Characteristic Features
The fruit ranges from small to medium or large depending on the variety and is typically conical, heart-shaped or slightly rounded. Numerous small yellowish to light-brown seeds are distributed across the outer surface.
The skin ranges from bright red to deep red when ripe, with a relatively glossy surface. The green calyx and stem remain attached to the fruit, and properly matured fruit should have relatively uniform coloration.
The flesh ranges from light red to bright red, with a soft, juicy texture and characteristic strawberry aroma. There are no large internal seeds; the small seeds are located on the outer surface.
Fruit at suitable maturity should have moderate firmness and should be free from bruising, juice leakage or fermentation. The stem and calyx should remain relatively green without significant yellowing or decay.
Acceptable raw material should be fresh and intact, with characteristic coloration and no bruising, decay, mold or abnormal odors. It should be free from excessive juice leakage, fermentation or abnormal discoloration.
Flavor & Texture
The flesh is soft and juicy, with slight crispness depending on the variety and maturity. It has a naturally sweet-and-sour flavor, with sweetness and acidity varying according to variety and ripeness. The aroma is characteristic, fresh and readily recognizable. Good-quality fruit should not have a bitter taste, excessive acidity or abnormal fermented odor.
Uses and Applications
Used for fresh consumption after washing and removing the stems.
Can be used in ready-to-eat fruit portions, fruit salads and desserts.
Can be used as an ingredient or garnish for cakes, ice cream, yogurt and other dessert products.
Can also be processed into juice, smoothies, jam, fruit sauce and other strawberry-based products.
Nutritionally, strawberries provide water, natural carbohydrates, vitamin C, folate, dietary fiber and antioxidant compounds, including anthocyanins; nutritional value varies according to variety and maturity.
