Characteristic Features

The seed coat is white, ivory, or cream-colored, with a smooth and relatively glossy surface. Some seeds may have a small hilum area that appears milky white, pale yellow, or light brown. Intact seeds are generally round and uniform, without cracks or excessive breakage.
The inner seed is cream-white to pale yellow. Acceptable raw material should be dry, clean, uniform, and free from insects, insect damage, mold, foreign matter, abnormal odors, excessive moisture, or unusual discoloration.

The beans have a mild characteristic legume aroma with a naturally nutty and slightly sweet flavor. In the dried state, the seeds are hard and firm. After soaking and cooking, they become soft and tender, with a smooth, creamy interior and a characteristic nutty flavor.
Uses and Applications
