Garlic

Garlic is the bulb of the garlic plant (Allium sativum), belonging to the family Amaryllidaceae. Garlic has a long history of cultivation in Central Asia and is now widely grown in many temperate and subtropical regions, including Vietnam. The bulb consists of multiple cloves arranged within several layers of dry outer skin and is characterized by its distinctive aroma and pungent flavor.

Distinctive Characteristics

The bulb is round or slightly flattened, covered by several layers of thin, dry skin that may range from white and ivory to light purple depending on the variety.

Inside the bulb are multiple garlic cloves, each enclosed in a thin protective membrane.

The cloves range from ivory to pale yellow, with a firm and succulent texture when fresh.

Dried garlic has a dry outer skin and firm bulbs, without excessive softness or signs of abnormal sprouting.

Depending on the variety and growing conditions, bulb size, number of cloves, and skin color may vary.

Flavor & Texture

Fresh garlic has a strong aroma, pungent flavor, and slightly sharp taste. When chopped, crushed, or minced, its characteristic aromatic compounds are released more intensely. During cooking, the pungency gradually decreases, developing a milder and slightly sweet flavor with a softer aroma. Fresh garlic cloves have a firm and crisp texture that becomes softer after cooking.

Uses & Applications

Used fresh as a seasoning in a wide range of dishes.

Can be minced, crushed, or sliced for stir-frying with vegetables, meat, fish, and seafood.

Used to marinate meat, fish, seafood, and other ingredients.

Can be fried or roasted to develop its characteristic aroma and flavor.

Used as an ingredient in dipping sauces, sauces, garlic-infused oil, and seasoning blends.

Can be pickled in vinegar or salt, or processed into various preserved garlic products.

Can be used as whole bulbs, individual cloves, or in pre-prepared forms depending on the cooking method.

Nutritionally, garlic provides vitamin B6, vitamin C, manganese, several minerals, and naturally occurring sulfur compounds, including allicin, which is formed when garlic is cut, crushed, or minced. Nutritional composition may vary depending on the variety, cultivation conditions, and storage methods.
