IDo Longan (Dimocarpus longan) belongs to the Sapindaceae family. It is a longan variety originating from Thailand and is widely cultivated in Vietnam. The fruit is relatively uniform in size, with yellowish-brown skin, thick juicy flesh, and a distinctly sweet flavor. It is commonly used for fresh consumption and dessert preparation.
Characteristic Features
The fruit is round to slightly spherical, relatively uniform in size, and typically grows in clusters. When ripe, the skin is yellowish-brown to brown with the slightly rough surface characteristic of longan fruit.
The flesh is translucent white to creamy white, relatively thick and juicy, and adheres firmly around the seed. The seed is black and small to medium in size.
IDo Longan generally has a relatively high edible flesh proportion, pronounced sweetness, and a characteristic mild aroma. Properly ripe fruit should have dry, intact skin without cracks or excessive juice leakage.
Acceptable raw material should be fresh and intact, with sound skin and no bruising, decay, mold, fermentation, or abnormal odors. The flesh should not be excessively soft, watery, or abnormally discolored.
Flavor & Texture
