
Mangosteen (Garcinia mangostana) belongs to the Clusiaceae family. It is a tropical fruit widely cultivated in southern Vietnam, particularly in the southeastern region and the Mekong Delta. The fruit is round, with thick dark-purple skin when ripe and white segmented flesh. It has a mildly sweet and slightly tart flavor with a characteristic delicate aroma.
Characteristic Features
The fruit is round, small to medium in size and relatively uniform in shape. It has a characteristic green calyx at the stem end, which usually remains fresh when the fruit is recently harvested.
The peel is relatively thick with a smooth surface. It is green when immature and gradually changes to reddish-purple or dark purple as the fruit ripens. The skin should remain intact without cracking, juice leakage or significant bruising.
The flesh is white to creamy white, divided into several segments, and soft and juicy. Some segments may contain seeds, with seed size varying between individual fruits.
Fruit at suitable maturity should have moderately firm skin with characteristic coloration and no cracking, excessive softness or signs of decay. The flesh should be white, juicy and free from drying, discoloration or signs of fermentation.
Acceptable raw material should be fresh and intact, without bruising, decay, mold or abnormal odors. The flesh should not be excessively firm, dried out or discolored.
Flavor & Texture
The flesh is soft, juicy and smooth with a slightly tender texture. It has a balanced sweet and mildly tart flavor with a delicate characteristic aroma. Good-quality fruit should not have a bitter taste, excessive sourness or abnormal fermented odors.
Uses and Applications
Used for fresh consumption after peeling and separating the fruit segments.
Can be used in ready-to-eat fruit portions, fruit salads and desserts.
Can also be used as an ingredient in juices, smoothies, sweet soups, ice cream and other fruit-based preparations.
Nutritionally, mangosteen provides water, natural carbohydrates, dietary fiber, vitamin C and various plant compounds; nutritional value varies according to maturity and growing conditions.
