The onion is a vegetable belonging to the *Amaryllidaceae* family, formed from a swollen underground bulb. Onions come in various varieties with common colors such as yellow, white, and red. They are a staple ingredient in Vietnamese cuisine and many culinary traditions worldwide. Currently, onions are cultivated in numerous vegetable-growing regions across Vietnam.
**Key Characteristics**
Onions are typically round, flattened-round, or slightly elongated, depending on the variety. The outer skin can be yellowish-brown, white, or reddish-purple, while the interior consists of multiple succulent, layered scales. The bulb features a root base at the bottom and a neck at the top.
High-quality onions are firm and feel heavy for their size, with dry, intact outer skins and natural coloring. The inner layers are crisp and succulent, showing no signs of mushiness, bruising, sprouting, waterlogging, or decay.
**Flavor & Texture**
Raw onions have a sharp, pungent taste and a distinctive aroma. When soaked, mixed, or used in salads, the pungency often mellows. The flesh is crisp and juicy.
When cooked, onions soften, their pungency diminishes, and a natural sweetness emerges—a quality that becomes particularly pronounced during prolonged sautéing or pan-searing. They also serve as a flavor base for stocks, sauces, and various other dishes.
**Uses and Applications**
Onions are widely used in food preparation:
Sautéed or pan-seared with beef, chicken, seafood, and other vegetables.
Used as an ingredient in soups, broths, and sauces.
Served fresh in salads, sandwiches, burgers, *bánh mì*, and wraps.
Incorporated into pizzas, pasta dishes, steaks, and European cuisine. Used to marinate meat, fish, and seafood, enhancing the flavor of dishes.
Suitable for grilling or frying alongside vegetables and meat.
Ideal for vegetarian menus, family meals, restaurants, and industrial kitchens.
Onions provide fiber, vitamins, minerals, and natural plant compounds, while also serving as a flavoring ingredient in many dishes.
