
Phan Rang Purple Shallots (Allium cepa var. aggregatum) belong to the onion family (Amaryllidaceae). They are purple shallots grown in the Phan Rang area of Ninh Thuan Province, where the dry, sunny climate provides suitable conditions for shallot cultivation. The bulbs are generally small to medium in size, round or slightly elongated, with reddish-purple to purplish-brown outer skin and creamy-white inner layers with light purple tones, a firm texture and characteristic aroma.
Characteristic Features
The bulbs are small to medium in size, round, slightly flattened or slightly elongated, with multiple thin layers surrounding the fleshy interior. The outer skin is reddish-purple to purplish-brown, dry and relatively firm, while the inner layers are creamy white with light purple tones.
The bulb flesh is firm, plump and naturally moist. The bulbs should be relatively dry and free from excessive softness, leakage or bruising. Good-quality raw material should consist of intact and clean bulbs without darkened areas, unusual spots or signs of mold.
The shallots should be clean and free from insects, pests or abnormal foreign matter. They should have no rotten, fermented, musty or other abnormal odors.
Flavor & Texture
Phan Rang purple shallots have a characteristic aroma, with a mild to moderate pungency when fresh and a natural sweetness typical of shallots. When cut or chopped, they release a distinct aroma and characteristic pungent flavor.
The bulbs are firm, crisp and juicy when fresh. When fried or sautéed, the shallots develop a stronger aroma, the pungency gradually decreases and a characteristic sweet, aromatic flavor develops; when cooked for a longer time, the texture becomes softer.
Good-quality raw material should not have an abnormal bitter taste, sour or burnt flavors, or rotten, musty or fermented odors.
Uses & Applications
Used as an aromatic ingredient to enhance the flavor of various dishes, particularly preparations requiring the characteristic aroma and mild pungency of purple shallots.
