Soursop has the scientific name Annona muricata and belongs to the Annonaceae family. It is a tropical fruit widely cultivated in Vietnam, particularly in southern regions. The fruit is medium to large in size, with green skin covered by characteristic soft spines. The flesh is white, juicy and aromatic, with a distinctive sweet-and-sour flavor.
Characteristic Features
The fruit is generally oval, elongated or slightly curved, with a medium to large size. Its surface is covered with numerous soft spine-like projections distributed relatively evenly.
The skin is green when immature and gradually changes to greenish-yellow or lighter green as the fruit reaches suitable maturity. The surface projections are relatively soft rather than hard and sharp.
The flesh is white to ivory, soft, juicy and slightly fibrous. The seeds are dark brown to black, relatively large and distributed throughout the edible flesh.
Fruit at suitable maturity should have intact skin, slight softness when gently pressed, well-developed flesh and no signs of excessive softness, liquid leakage or fermentation.
Acceptable raw material should be fresh and intact, without bruising, decay, mold or abnormal odors. The flesh should be free from discoloration, sliminess or fermentation.
Flavor & Texture
The flesh is soft, juicy and slightly fibrous, and can be separated into pieces during preparation. It has a characteristic sweet-and-sour flavor, with noticeable acidity combined with mild to moderate sweetness. The aroma is strong and characteristic of soursop. Good-quality fruit should not have a bitter taste, excessive abnormal sourness or fermented odor.
Uses and Applications
Used for fresh consumption after peeling, separating the flesh and removing the seeds.
Can be used as an ingredient for smoothies, juices, fruit beverages and blended drinks.
Can also be used in desserts, ice cream, fruit yogurt and other fruit-based products.
Nutritionally, soursop provides water, natural carbohydrates, dietary fiber, vitamin C, potassium and various plant compounds; nutritional value varies according to variety and maturity.
