Boneless beef ribs are cut from the brisket or belly (short plate) of the cow, where the short rib bones are located. After the bones are completely removed, you have thick, continuous strips of meat.
"Premium" marbling: The most distinctive feature of boneless beef ribs is the perfect interwoven distribution of dark red lean meat and rich, white fat. This structure is similar to the marbling of Wagyu beef, creating a tender, juicy texture and a characteristic rich, savory flavor.
"Sweet" flavor: Thanks to its location near the active abdominal muscles, boneless beef ribs have a very rich, deep beef flavor. When cooked, the fat melts and blends into the meat, creating a melt-in-your-mouth sensation and an incredibly fragrant, rich taste.
"Unrivaled" culinary applications: This is the "king" of many cooking styles. It's perfect for Korean BBQ (Galbi), charcoal grilling, or thinly sliced for hot pot (Shabu-shabu/Yakiniku). It's also a great choice for long-braised dishes, where the meat becomes tender and juicy, absorbing the sauce without falling apart.
