Beetroot (or beet) is a root vegetable belonging to the Amaranthaceae family, native to the Mediterranean region and Europe. It is currently cultivated in many countries, including Vietnam—particularly in regions with cool climates suitable for the crop, such as Da Lat (Lam Dong) and other specialized vegetable-growing areas.
**Key Characteristics**
Beetroots are round or elongated, with an outer skin that is typically purplish-red or dark red. The flesh features a distinctive purplish-red hue, sometimes displaying alternating lighter-colored rings depending on the variety.
They come in various sizes with relatively smooth surfaces; natural soil may still adhere to the root after harvesting. High-quality beetroots are firm and feel heavy for their size, with intact surfaces free from mushiness, bruising, or signs of spoilage.
**Flavor & Texture**
Beetroot has a natural sweetness, a characteristic earthy flavor, and a mild aroma. When eaten raw, the flesh is firm and crisp; when boiled, steamed, or cooked, it softens while retaining its natural sweetness and distinctive purplish-red color.
Its natural pigment can be used to color dishes, juices, and various processed food products.
**Uses & Applications**
Beetroot is widely used in food preparation and F&B menus. Common applications include:
Soups and stews: imparting natural sweetness and a distinctive color to the dish.
Boiling and steaming: served as a standalone vegetable dish or combined with other root vegetables.
Salads: used either raw or pre-cooked, combined with leafy greens and other ingredients. Juices and smoothies: consume on their own or combine with carrots, apples, oranges, and other fruits.
Vegetarian dishes: combine with potatoes, carrots, pumpkin, mushrooms, and other vegetables.
Food processing: use as a natural coloring and flavoring ingredient for various products.
Beetroot contains fiber, folate, vitamins, and minerals, while also providing natural plant compounds that give the root its characteristic reddish-purple color.
