
Phan Rang Single-Clove Garlic (Allium sativum) belongs to the onion family (Amaryllidaceae). This is a distinctive type of garlic in which each bulb contains only one single clove, grown in the Phan Rang area of Ninh Thuan, where the dry, sunny climate and natural conditions are suitable for garlic cultivation. The bulb is generally small to medium in size, round or slightly elongated, with an ivory-white to grayish-white outer skin, while the inner clove is firm, naturally moist and has the characteristic aroma of garlic.
Characteristic Features
The bulb is round or slightly elongated in shape, small to medium in size, and is characterized by having only one single garlic clove inside rather than being divided into multiple cloves like conventional garlic bulbs.
The outer skin is ivory-white, grayish-white to slightly pale yellow depending on the variety, maturity and storage conditions. It is relatively dry, thin and firmly attached to the bulb. The surface should be clean, without darkened areas, unusual spots or signs of mold.
The inner clove is creamy white to ivory white, firm, plump and naturally moist. Good-quality raw material should be relatively intact, without bruising, excessive softness, leakage, sprouting or signs of spoilage.
The bulbs should be clean and free from insects, pests or abnormal foreign matter. They should have no sour, fermented, musty, rotten or other abnormal odors.
Flavor & Texture
Phan Rang single-clove garlic has the characteristic pungent flavor of garlic, with a rich taste, mild natural sweetness and a distinct aroma that becomes more pronounced when the garlic is cut, chopped or crushed.
The fresh clove has a firm, slightly crisp and juicy texture. When boiled, steamed or cooked, the garlic becomes softer, the pungency decreases, and the aroma becomes milder, richer and slightly sweet.
Good-quality raw material should not have an abnormal bitter taste, sour or burnt flavors, or musty, rancid or fermented odors.
