
Da Lat Crisp Persimmon – Square Persimmon belongs to the genus Diospyros and the Ebenaceae family. It is a group of crisp persimmons commonly cultivated in Da Lat and surrounding areas, characterized by a square or slightly flattened shape, firm and crisp flesh, and a mildly sweet flavor. The fruit is generally consumed at an eating-ripe stage while retaining its characteristic crisp texture.
Characteristic Features
The fruit is square-shaped and slightly flattened, with relatively distinct shoulders and edges and a medium size. The stem is generally short and firmly attached to fresh fruit.
The skin develops a yellow-orange to orange-red color at maturity. The surface is relatively smooth and firm and may have a light natural bloom.
The flesh is yellow-orange to light orange, firm, crisp and juicy. Seeds may be present or absent depending on the variety and pollination conditions.
Fruit at the suitable maturity stage should have relatively uniform coloration and retain a firm, crisp texture without excessive softness or mushiness. It should be free from major cracks, juice leakage or signs of fermentation.
Acceptable raw material should be fresh, firm and intact, without bruising, decay, mold or abnormal odors. The flesh should not be excessively darkened, soft or watery.
