
Da Lat Trung Loc Crisp Persimmon belongs to the genus Diospyros and the Ebenaceae family. It is a characteristic persimmon variety cultivated in Da Lat, Lam Dong Province, and belongs to the local Trung persimmon group. The fruit is elongated and egg-shaped, with deep yellow skin that may develop an orange to orange-red color as it ripens. When properly processed and matured, the fruit has firm, crisp, juicy flesh, a sweet flavor and a light characteristic aroma.
Characteristic Features
The fruit is elongated and egg-shaped, resembling a chicken egg, with medium size and relatively uniform shape. The stem should remain reasonably firm and free from breakage or decay.
The skin is relatively thick and smooth, with a deep yellow color at the mature stage and may gradually develop an orange to orange-red color as the fruit ripens.
The flesh ranges from yellow-orange to light orange, with a firm, crisp and relatively dense texture. The fruit is juicy, and seeds may be present depending on the individual fruit.
Trung Loc persimmons are commonly harvested when mature and subsequently treated or conditioned to reduce astringency before consumption. When prepared as crisp persimmon, the fruit retains its characteristic firm and crunchy texture.
Acceptable raw material should be fresh, firm and intact, without bruising, decay, mold or abnormal odors. The flesh should not be mushy, excessively darkened, watery or show signs of fermentation.
