
Green Xiem Coconut has the scientific name Cocos nucifera and belongs to the Arecaceae family. It is a popular drinking coconut type in Vietnam, widely cultivated in the Mekong Delta, particularly in Ben Tre. The fruit is generally small to medium in size, with green skin, abundant coconut water with a naturally sweet flavor and soft young flesh.
Characteristic Features
The fruit is round to oval or slightly elongated, with a small to medium size. The outer skin has a characteristic green color and is generally harvested while fresh.
The outer husk is green and relatively firm, with a hard inner shell protecting the coconut water and flesh. Good-quality fruit should have an intact surface without cracks, bruising or leakage.
The coconut water is clear to slightly cloudy, relatively abundant, naturally sweet and mildly aromatic. The young flesh is white, soft, smooth, juicy and generally moderately thick.
Fruit at suitable harvest maturity should have fresh, firm skin without mold, decay or signs of fermentation. The coconut water should have no abnormal coloration, sour odor or unusual taste.
Acceptable raw material should be fresh and intact, without cracks, breakage, bruising, mold, decay or abnormal odors. The coconut water should not be sour, slimy, fermented or abnormally discolored.
Flavor & Texture
The coconut water has a mildly sweet, refreshing flavor with low acidity and a characteristic natural aroma. The young flesh is soft, smooth, juicy and slightly crisp. Good-quality coconut should not have a bitter taste, excessive acidity or abnormal fermented odor.
Uses and Applications
The coconut water can be consumed directly or used as an ingredient in beverages.
Young coconut flesh can be eaten fresh, used in desserts and fruit salads, or combined with other ingredients.
Coconut water can be used in cooking, braising, soups and other preparations as a natural source of sweetness.
The coconut flesh can also be used to produce coconut milk and other coconut-based dishes and desserts.
