
Beef short ribs are harvested from the brisket or upper belly of the cow (from the 6th to the 8th rib). This is the meat area located just below the premium loin ribs, but it has a more unique structure.
Perfectly interwoven structure: The most distinctive feature of short ribs is the interwoven distribution of pinkish-red lean meat fibers with rich, creamy white fat, along with a layer of muscle membrane and sometimes a little soft cartilage. This ideal fat-to-meat ratio creates a rich, savory flavor and natural tenderness.
Deeply sweet flavor: Due to its proximity to the bone and its rich connective tissue structure, beef short ribs have a very rich, deeply sweet, and characteristic beef flavor. When slow-cooked, these connective tissues melt into gelatin, making the meat juicy, buttery, and incredibly delicious.
Versatile culinary applications: Thanks to its balanced meat and fat content, short ribs are the "king" of BBQ (Korean-style thinly sliced - Kalbi), braised and stewed dishes (like beef stew, lagu) cooked for extended periods, or even smoked whole (Texas style).
