It is commonly cultivated on cellulose-rich materials, with straw being one of the traditional growing substrates. The trimmed product is prepared by removing the base and attached growing material, making the mushrooms more convenient for further preparation and cooking.
Distinctive Characteristics
The mushrooms are round, oval, or egg-shaped when young; as they mature, the caps gradually expand into a round or slightly flattened shape.
The caps range from light gray and grayish brown to brown depending on the stage of development, with a relatively smooth surface.
The stems are white to ivory, relatively short and firm, and positioned beneath the caps.
The base has been trimmed to remove attached growing material and surface residues, making the product more convenient to prepare.
Fresh, good-quality mushrooms have firm stems, intact caps, natural coloration, a dry surface, and no signs of sliminess, abnormal dark discoloration, or mold.
The mushrooms are generally harvested while young to maintain their rounded shape, firm texture, and freshness.

Straw Mushroom has a characteristic aroma, mild, slightly sweet flavor, and natural umami. Young mushrooms are firm, slightly crisp, and juicy. When cooked, they become softer while retaining slight chewiness and their characteristic flavor.
