- Red-Roe Crabs are mature female crabs with fully developed ovaries, forming a layer of roe that fills their shells. When cooked, this roe turns a vibrant orange-red color, like lipstick – hence the name "Gach Son" Crab. This roe has a rich, creamy, and intensely sweet flavor. It is considered a premium and highly valuable type of sea crab.
- Red-Roe/Gach Son Crabs are rich in easily absorbed protein, contain high levels of Omega-3 fatty acids beneficial for cardiovascular health, and are rich in B vitamins and minerals such as calcium, zinc, and iron. However, crab roe contains a lot of cholesterol, so people with underlying cardiovascular disease or high cholesterol should consume it in moderation.
