
Asparagus – Grade 1 (Asparagus officinalis L.), family Asparagaceae. This is young asparagus harvested while the shoots are tender. Grade 1 requires uniform, straight, firm, fresh and visually well-formed spears, suitable for food processing. The spears should have a natural green color with tightly closed tips.
Characteristic Features
Grade 1 asparagus spears should be relatively uniform in size within the same lot, straight or slightly curved, firm, and free from excessive softness or shriveling. The surface should be smooth with a naturally uniform green color and no major dark discoloration or significant physical damage.
The asparagus tips should be tightly closed, compact, and firm, with closely arranged scales. The tips should not be widely opened or excessively mature. The tip should have a natural green color without yellowing or bruising. The tender stem should be crisp, moderately juicy, and low in fiber.
Grade 1 asparagus should have a uniform appearance, be clean and fresh, and have no excessive roots or overly mature basal portions. Spears with wilting, softness, slime, decay, mold, pest damage, excessive breakage, or abnormal odor are not acceptable. Minor natural variation in shape may be acceptable provided that it does not affect usability or quality.
Flavor & Texture
Asparagus has a mild characteristic aroma with a fresh, slightly sweet and green flavor. Grade 1 spears are tender, firm, crisp, moderately juicy, and low in fiber. The tips are softer than the stems while retaining their structure. When properly cooked, the asparagus retains a desirable crisp texture without becoming excessively soft.
Uses and Applications
Grade 1 asparagus is commonly used for stir-frying, pan-searing, steaming, boiling, roasting, or cooking with meat, shrimp, fish, and seasonings. During preparation, the tough or fibrous basal portion is trimmed, followed by washing and cutting into suitable sections according to the intended use.
Nutritionally, asparagus provides dietary fiber, folate, vitamins C, K and A, potassium, and various minerals and naturally occurring plant compounds.
