"Rocket" Napa cabbage is a variety distinguished by its elongated, compact, and upright head, resembling an arrow or a rocket. Belonging to the *Brassicaceae* (mustard) family, it features leaves arranged in a relatively tight head. It is currently cultivated in many vegetable-growing regions across Vietnam.
**Key Characteristics**
Rocket Napa cabbage has a longer, more slender head compared to many common Napa cabbage varieties. The leaves are arranged vertically along the stem; the stalks range from white to ivory, while the leaf blades transition from pale green on the outside to yellow-green or pale yellow on the inside.
The leaf stalks are relatively thick and succulent, with prominent veins. High-quality heads are typically symmetrical and feel firm and heavy; the leaves should be fresh, free from bruising or waterlogging, and show no signs of spoilage.
**Flavor & Texture**
Rocket Napa cabbage offers a mild, clean sweetness and the characteristic, subtle aroma of *Brassicaceae* vegetables. The stalks are crisp and juicy when eaten raw, while the inner leaves are softer and slightly sweet.
When cooked, the cabbage softens quickly yet retains a degree of crispness in the stalks. The structure of the leaves and stalks allows the vegetable to easily absorb broths, seasonings, and sauces during cooking.
**Uses and Applications**
Rocket Napa cabbage is versatile and suitable for various dishes:
* Added to hotpots, soups, or stews, thanks to its succulent stalks and quick-cooking nature.
* Stir-fried with beef, pork, chicken, seafood, or mushrooms.
* Boiled, steamed, or blanched as a vegetable side dish.
* Used as an ingredient for kimchi and other pickled vegetable dishes.
* Used in wraps or rolls with meat or other vegetables. Suitable for use in noodle dishes, stir-fries, pasta, and mixed vegetable dishes.
Ideal for vegetarian menus, home kitchens, restaurants, and industrial food service.
Rocket napa cabbage provides fiber, vitamins, minerals, and natural plant compounds, making it a great addition to a wide range of vegetable-based dishes.
