This is young asparagus harvested while the shoots are tender, with smaller stems than Grade 1 while maintaining freshness, firmness, and suitability for food processing. The spears have a natural green color, tightly developed tips, and a relatively uniform appearance.
Characteristic Features
Grade 2 asparagus has smaller stem diameters than Grade 1, generally below approximately 1 cm, with straight or slightly curved cylindrical stems. The stems should remain firm and fresh, without excessive shriveling or softness. The surface is relatively smooth, naturally green, and free from major dark discoloration or significant physical damage.
The asparagus tips should be tightly closed, compact, and firm, with closely arranged scales. The tips should not be widely opened or excessively mature. They should have a natural green color without yellowing or bruising. The young stems should be crisp, moderately juicy, and relatively low in fiber.
Grade 2 asparagus should be clean and fresh, with no signs of wilting, softness, slime, decay, mold, pest damage, or abnormal odor. Minor variation in stem curvature and diameter may be acceptable provided that it does not affect quality or usability.
Flavor & Texture
Asparagus has a mild characteristic aroma with a fresh, slightly sweet and green flavor. The young stems are tender, firm, crisp, and moderately juicy, while the tips are softer but retain their characteristic structure. Due to the smaller stem size, Grade 2 asparagus generally requires a relatively short cooking time.
Uses and Applications
Grade 2 asparagus is commonly used for stir-frying, pan-searing, steaming, boiling, roasting, or cooking with meat, shrimp, fish, and seasonings. During preparation, the tough or fibrous basal portion is trimmed, followed by washing. The spears may be kept whole or cut into sections according to the intended use.
Nutritionally, asparagus provides dietary fiber, folate, vitamins C, K and A, potassium, and various minerals and naturally occurring plant compounds.
