This is young asparagus harvested while the shoots are tender, with smaller stems than Grade 2 while maintaining freshness, firmness, and suitability for food processing. The spears have a natural green color, tightly developed tips, and a relatively uniform appearance.
Characteristic Features
Grade 3 asparagus has smaller stem diameters than Grade 2, generally below approximately 0.7 cm, with straight or slightly curved cylindrical stems. The stems are relatively uniform in size within the same lot, firm and fresh, without excessive shriveling or softness. The surface is relatively smooth, naturally green, and free from major dark discoloration or significant physical damage.
The asparagus tips should be tightly closed, compact, and firm, with closely arranged scales. The tips should have a natural green color without yellowing, bruising, or signs of excessive maturity. Due to the smaller stem size, Grade 3 asparagus has tender stems and is easy to prepare.
Grade 3 asparagus should be clean and fresh, with no signs of wilting, softness, slime, decay, mold, pest damage, or abnormal odor. Minor variation in stem curvature and diameter may be acceptable provided that it does not affect quality or usability.
Flavor & Texture
Asparagus has a mild characteristic aroma with a fresh, slightly sweet and green flavor. Grade 3 asparagus has tender, soft, slightly crisp, and moderately juicy stems, while the tips are softer but retain their characteristic structure. Due to the smaller stem size, Grade 3 asparagus generally requires a short cooking time.
Uses and Applications
Grade 3 asparagus is commonly used for stir-frying, pan-searing, steaming, boiling, roasting, or cooking with meat, shrimp, fish, and seasonings. The spears may be kept whole or cut into sections according to the intended use. During preparation, the tough or fibrous basal portion is trimmed and the spears are washed before cooking.
Nutritionally, asparagus provides dietary fiber, folate, vitamins C, K and A, potassium, and various minerals and naturally occurring plant compounds.
