
Chuong Bo Durian (Durio zibethinus) belongs to the Malvaceae family. It is a local durian variety cultivated in several areas of southern Vietnam, particularly in the Mekong Delta. The fruit is medium-sized, with green to greenish-brown skin and relatively sparse spines. The edible flesh is pale yellow to deep yellow, soft, creamy and characteristically aromatic.
Characteristic Features
The fruit is round to slightly oval and generally medium in size. The peel is divided into distinct sections and covered with relatively sparse spines, with spine size varying between individual fruits.
The skin ranges from green to greenish-brown depending on maturity. The stem is relatively firm and may develop a light brown color as the fruit reaches suitable maturity.
The flesh is pale yellow to deep yellow, soft, creamy and sticky. The seeds may be either underdeveloped or normally developed depending on the individual fruit; seed size and the flesh-to-seed ratio may vary.
Fruit at suitable maturity should have fully developed flesh with characteristic color and a soft texture, without abnormal firmness, excessive mushiness or signs of fermentation. The flesh segments should not be excessively dry or discolored.
Acceptable raw material should be fresh and intact, without bruising, decay, mold or abnormal odors. The flesh should not be excessively dry, hard, watery or discolored.
Flavor & Texture
The flesh is soft, creamy, sticky and relatively smooth. It has a distinctly sweet and rich flavor with the characteristic aroma of durian. Good-quality fruit should not have abnormal sourness, bitterness or fermented odors.
Uses and Applications
Used for fresh consumption after removing the peel and separating the edible flesh.
Can be used as an ingredient in durian ice cream, smoothies, sweet soups, cakes and desserts.
The edible flesh can be separated and refrigerated or frozen for storage and use in various durian-based preparations.
Nutritionally, durian provides energy, carbohydrates, fat, protein, dietary fiber, vitamins and minerals; nutritional composition varies according to variety and maturity.
