White Button Mushrooms (Agaricus bisporus) belong to the family Agaricaceae. They are a common edible mushroom with a round or slightly rounded fruiting body, white to creamy-white in color, and are usually harvested at an immature stage. The mushrooms have thick white flesh, naturally high moisture content, a firm and juicy texture, and a mild characteristic aroma. White button mushrooms have a delicate flavor, slight natural sweetness, and mild umami notes.
Characteristic Features
The fruiting body is round, spherical, or slightly flattened, with a small to medium size depending on the harvesting stage. The cap is white to creamy-white and generally smooth, with a slightly dry surface or a light layer of natural moisture.
The underside of the cap has closely arranged gills. In young mushrooms, the gills are usually pale pink to pinkish-gray and gradually turn brown as the mushroom matures. The stem is white, cylindrical, and firm, and may have a thin ring depending on the maturity stage.
The flesh is white to creamy-white, firm, juicy, and naturally resilient. Acceptable raw material should be relatively intact, without bruising, excessive softness, sliminess, leakage, or signs of decomposition.
The mushrooms should be clean and free from insects, pests, and abnormal foreign matter. They should not have sour, fermented, rotten, musty, or other abnormal odors.
Flavor & Texture
White button mushrooms have a mild characteristic aroma of fresh mushrooms, a delicate flavor, slight natural sweetness, and mild umami notes.
The fresh mushrooms have a firm, juicy, and slightly crisp texture. When sautéed, pan-seared, roasted, steamed, or cooked, they gradually become softer while retaining their shape and a slight chewiness if not overcooked.
Good-quality mushrooms should not have bitter or sour flavors or abnormal rancid, musty, or fermented odors. The surface should not feel slimy or excessively soft.
Uses & Applications
Used as an ingredient in stir-fried, pan-seared, roasted, steamed, boiled, and stewed dishes.
They can be used in soups, broths, sauces, vegetable dishes, and preparations that require a natural umami flavor.
The mushrooms can be sliced, halved, or used whole depending on the preparation. They can be combined with vegetables, meat, poultry, seafood, or plant-based ingredients.
Nutritionally, white button mushrooms provide protein, dietary fiber, B vitamins, potassium, copper, and other minerals. Their nutritional value may vary depending on growing conditions, freshness, and cooking method.
