Coriander

Coriander is an aromatic herb belonging to the Apiaceae family, scientifically known as Coriandrum sativum. It originated in the Mediterranean region and Southwest Asia and is now widely cultivated in many countries, including Vietnam. Coriander has small green leaves, soft stems, and a distinctive aroma, and is commonly used as a culinary herb in a variety of dishes.

Distinctive Characteristics

The leaves are round or finely lobed, growing on long, soft leaf stalks.

Young leaves are typically bright green, soft, and thin, while mature upper leaves tend to be smaller and more finely divided.

The stems are slender, soft, green, and may branch as the plant develops.

Good-quality coriander has fresh, naturally green leaves with no signs of yellowing, bruising, waterlogging, pest damage, or mold.

The roots are small and concentrated at the base. The leaves and tender stems can both be used after proper preparation.

Leaf size, stem tenderness, and aroma intensity may vary depending on the variety, growing conditions, and maturity.

Flavor & Texture

Coriander has a distinctive herbal aroma, a fresh and mildly spicy flavor, and a characteristic aftertaste. The leaves are thin, soft, and succulent, while the tender stems have a slightly crisp and firm texture. Chopping or gently crushing the leaves releases a more pronounced aroma.

Uses & Applications

Fresh accompaniment: served with pho, rice noodles, noodle soups, porridge, noodles, and other brothy dishes.

Salads & mixed dishes: combined with vegetables, meat, seafood, and other fresh herbs.

Soups & broths: added to soups, broths, and liquid-based dishes to enhance aroma.

Meat & seafood dishes: used as a fresh herb accompaniment or incorporated into dishes made with meat, fish, and seafood.

Dipping sauces & seasonings: chopped and added to selected dipping sauces, dressings, and seasoning mixtures.

Food decoration: used with the leaves and tender stems to add color and finish the presentation of dishes.

Preparation: can be used as whole sprigs or separated into leaves, then chopped or cut into sections depending on the intended use.

Nutritionally, coriander provides dietary fiber, vitamins A, C, and K, folate, potassium, calcium, and various naturally occurring plant compounds. Nutritional composition may vary depending on the variety, growing conditions, maturity, and storage conditions.
